How To Make Coconut Cream Pie
1. Bake And Cool The Crust
Prepare and blind-bake a 9-inch pie crust according to your recipe until the edges and bottom are lightly golden. Let it cool completely while you make the filling.
For an especially crisp crust, make sure there are no warm spots left before adding the custard.

2. Start The Coconut Custard
In a saucepan, whisk together 1 ½ cups whole milk, 1 cup full-fat coconut milk, ¾ cup granulated sugar, ⅓ cup cornstarch, and ¼ teaspoon salt until smooth.
Cook over medium heat, whisking frequently, until the mixture becomes noticeably thicker and begins to bubble gently.
3. Temper The Egg Yolks
Whisk 4 large egg yolks in a separate bowl. Slowly drizzle about 1 cup of the hot milk mixture into the yolks while whisking constantly.
Pour the tempered yolk mixture back into the saucepan and continue cooking for about 2 minutes, whisking constantly. The custard should be thick enough to coat the whisk and hold soft peaks.
Remove it from the heat and stir in 2 tablespoons butter, 1 teaspoon vanilla extract, and 1 cup unsweetened shredded coconut.
4. Fill And Chill

Pour the hot coconut custard into the cooled pie crust and smooth the surface. Press plastic wrap directly against the custard to prevent a skin from forming.
Refrigerate for at least 4 hours, preferably longer. The pie needs to be thoroughly chilled before slicing.
5. Finish With Whipped Cream
Beat 1 cup cold heavy cream, 2 tablespoons powdered sugar, and ½ teaspoon vanilla until medium-stiff peaks form.
